Healthy lunch

Pink herring salad (3 kg)
gluten-free

Ingredients:

  • 1 kg chopped beetroot
  • 700 g of chopped boiled potatoes
  • 5 boiled and grated eggs
  • 200 g of chopped fresh cucumber
  • 200 g of chopped pickles
  • 2 chopped red onions
  • 300 g of chopped herring fillet
  • 380 g plain yogurt
  • 200 g of 10% sour cream
  • 3 teaspoons of Himalayan salt
  • 1 tsp ground black pepper
  • 2 teaspoons of mustard

Preparation:

Mix all the components together. There will be quite a large amount of salad. If you know that your family won’t eat that much, then consider all amounts by half. This way you get about 1.5 kg of salad.
